Fermentation was carried out in custom-built stainless steel tanks, guided by LB-002 and LOY-007. A fermentation medium (LOM-111) was used at a volume of 23.2 liters, representing a 15% concentration. The process lasted 4.9 days under controlled conditions in an average temperature of 17.6°C The coffee was dried over 15.4 days in temperature and humidity-regulated drying rooms.
Aroma: Delicate aromas of caramel and chocolate.
Taste: Layers of chocolate and light citrus.
Acidity: Medium, balanced.
Body: Velvety, leaving a smooth finish.
