Fermentation was carried out in custom-built stainless steel tanks, guided by LOY-007 and LOB-002. The process lasted 6.2 days under controlled conditions. The coffee was dried over 3 3 days in temperature and humidity-regulated drying rooms.
Aroma: Aromas of chamomile, cocoa, and vanilla, with peach, plum, and chocolate.
Taste: A refined cup with peach syrup, chocolate, and citrus.
Acidity: Medium, peach type, bright.
Body: Medium, creamy, ending silky and composed.
