Fermentation was carried out in custom-built stainless steel tanks without the addition of a microbial starter. A fermentation medium (LOM-111) was used at a volume of 27.0 liters, representing a 15% concentration. The process lasted 4.6 days under controlled conditions in an average temperature of 12.2°C The coffee was dried over 16.6 days in temperature and humidity-regulated drying rooms.

Aroma: Inviting notes of floral, white flower, and currant, with caramel and cinnamon.
Taste: Layers of lemon peel, black tea, and berries, supported by chocolate.
