Fermentation was carried out in custom-built stainless steel tanks, guided by LOY-013. A fermentation medium (LOM-111) was used at a volume of 28.5 liters, representing a 15% concentration. The process lasted 6.9 days under controlled conditions in an average temperature of 10.1°C The coffee was dried over 23.5 days in temperature and humidity-regulated drying rooms.
Aroma: Aromas of hazelnut, molasses, and spices, with toffee, lavender flower, buttery, caramel, and orange peel.
Taste: Layers of toffee, caramel, and orange peel.
Acidity: Medium, refreshing.
Body: Medium, creamy, leaving a smooth finish.
