Fermentation was carried out in custom-built stainless steel tanks, guided by LOB-001P and LOY-007P. A fermentation medium (LOM-111) was used at a volume of 32.7 liters, representing a 15% concentration. The process lasted 4.9 days under controlled conditions in an average temperature of 16.5°C The coffee was dried over 15.4 days in temperature and humidity-regulated drying rooms.
Aroma: Fragrant hints of toasted caramel, peach, and chocolate, with grapefruit peel.
Taste: A clean, sweet profile of licorice, peach, and plum, supported by cane honey and milk chocolate.
Acidity: Bright citrus.
Body: Medium, with a balanced finish.
